Vacuum cooling is a pre-cooling method, which cools the product by evaporating water from the inside of the product. This evaporation takes amount of energy from the product in the form of heat to ensure rapid cooling, which is usually within 15-30 minutes for most products.
Vacuum precooling is very suitable for products with high surface volume ratio, such as leafy salad, spinach, mushrooms, compost, sprouts and fresh-cut flowers. But other (more compact) products, such as beans, broccoli, celery and sweet corn, and perishable (straw) berries, can also be quickly and efficiently pre-cooled by vacuum cooler.
